On behalf of the City of Munich, Speiseräume developed the conceptual framework: in an extensive preliminary study, existing structures were analysed, approaches were tested in practice, and a viable model was developed on this basis. The aim is to create a space that promotes organic produce, craftsmanship and freshness – and provides practical support for kitchen teams.
